Spicy Butter & Cream Corn and Shrimp with Couscous
This is one of those recipes I just made up. You will see a lot of fish recipes on this site because I do not like Nemo’s friends. I will on occasion make my wife shrimp or fish. So here is a rick french fusion recipe I came up with.
Ingredients
- -2 Cup of chicken or vegetable stock
- -1 t of fresh thyme
- -1t of fresh oregano
- -2 clove of fresh garlic
- -1/4 C chopped onion
- -1 C chopped tomato
- -1 C chopped broccoli
- -1C of couscous
- salt and pepper to taste
Couscous:
- -6 T of Butter
- -1/3 C of chopped onions
- -1 clove of garlic
- -1 1/2 C of fresh corn
- -1 1/2 t of salt mix ( I used McCormick Montreal Seasoning)
- -1 1/2 t of red pepper flakes
- 1 lb of fresh shrimp
- around 1/3 C of half and half or heavy cream
Shrimp and Corn:
Instructions
- add herbs, garlic and onions to stock and bring to a simmer for 5 minutes
- add rest of ingredients
- cover, turn off heat and let sit for 5 minutes
Couscous:
- add 4 T of butter to pan
- add corn, garlic and onions and saute for 5 minutes
- add shrimp, salt mix and red pepper and cook shrimp until almost done
- add 1-2 T of Butter and cream
- remove from heat and serve
