Jerked Chicken and Caribbean Rice 2018 Episode 52

 

How about a homemade jerked half chicken recipe.  This is easy to make and will render a more flavorful chicken.  You will be surprised that even though this has scotch bonnet peppers it is not as hot as you might expect.  My wife didn’t even complain about the heat.

I ate something like this once at a restaurant in Atlanta called, “Eats.”  I made the rice a little bland by using water instead of chicken stock.  I didnt’ want it to overpower the chicken.  If you don’t like rice and beans the chicken is great on its own.

My gas grill broke and i had to put charcoal in it to cook this meat.  It gets a little hot so most grill will not char like mine.  You do have to cook the chicken a little longer than normal and to full cook the meat on the inside.  You don’t have to serve the half a chicken either.  You can easily separate the meat.
