Homemade Hickory Smoked Tamales Episode 4 Part 3 Homemade Hickory Smoked Tamales Homemade Hickory Smoked Tamales Episode 4 Part 3 Category: Blog, Mexican Recipes, Southern Recipe, Southwestern Recipes, Video posts Ingredients Red Sauce for Meat -4 cloves of garlic -3/4 C of white sweet onion -1 Fresh jalapeno pepper -1 Guajillo chili -2 Ancho chilis -3 Chipotle chilis -2 Roma tomatoes -1 t salt 1 1/2 t whole cumin seed Masa -3 C of masa mix -3 C of chicken stock -1 t salt -1 1/2 t baking powder -1/3 C lard Instructions Red Sauce for Meat Simmer all above ingredients for 5 minutes and let rest for 10 minutes except Cumin and Salt and Tomatoes. Simmer tomatoes in stock for 15 minutes and remove skin. Add all ingredients in blender and mix until smooth. Chicken Stock for Masa -32 OZ of Good quality chicken stock. Simmer with tomatoes, 2 cloves of garlic and onions for 15 minutes. Separate liquid from solid. Tomatoes, garlic and onions will be used in Red Sauce above. Add 1/2 Cup of water to stock. Combine masa mix, salt and baking powder and mix Add lard and mix with pastry knife Slowly add stock until masa is light and fluffy.
