- -2 red peppers roasted and copped
- -6oz of chopped fresh spinach
- -12 oz of quartered Greek olives(I used a medley) for mild flavor you can use black olives.
- -2 C of fresh tomatoes
- -9 oz salami cubed
- -1 lb of pasta I used Orecchiette
- -1 Cup of freshly chopped basil
- salt and pepper to taste
- -6oz tomato/basil feta cheese
- -1 whole clove or roasted garlic (Yes, the whole thing!)
- -1/4-1/3 Cup of olive oil
- -1/4-1/3 Cup of Balamic Vinegar
- -1/4 Cup of fresh oregano
- -1 t sugar
- -salt and pepper to taste.
- Toss everything in a bowl and mix. Remember to add salt and pepper as you mix. Serve and enjoy!
