Chicken Alfredo with Fried Zucchini
How to make Chicken Alfredo with Fried Zucchini. You could serve this with or without pasta. The frired zucchini could also be made on its own and served with ranch dressing.
Ingredients
- 1/4 C onion
- 1 garlic clove
- 1 T olive oil
- 1 t butter
- 1 C heavy cream or half and half
- 1/4 C pecorino romano cheese
- red pepper flakes (optional)
- Black pepper
Alfredo Sauce:
- As many chicken breasts as you need!
- Seasoning
- Olive oil
Chicken:
- Zucchini cut in 1/4" rounds
- flour
- 3 eggs
- 1t onion powder
- 1t garlic salt
- 1 T hot pepper (I used kimchi pepper but cayenne is fine)
- 1/4 C pecorino romano cheese
Fried Zucchini:
Instructions
- Heat pan and add olive oil and onions
- Cook until translucent
- add garlic, red pepper and cream
- simmer until coats a spoon
- I made it thicker than normal for this recipe
- add cheese and black pepper
- remove from heat
Alfredo Sauce:
- Coat chicken in oil and season
- add to hot pan with oil
- sear chicken on both sides
- add 1 C of water and simmer on both sides until liquid is almost gone
- remove from heat to rest
- add any remaining liquid over chicken
Chicken:
- heat frying oil in pan to 350-375 degrees
- slice zucchini into 1/4 inch round pieces
- lightly flour both sides
- beat eggs
- add onion powder, garlic salt, hot pepper, flour, panko bread crumbs, and pecorino romano cheese to bowl and mix
- dip zucchini into egg and then break in bread crumbs
- Fry until golden brown and put on paper towel to cool
- Slice chicken and plate
- top with alfredo sauce and then fried zucchini
- I garnished with fresh basil
- Serve and Enjoy!
