How to make a spicy sweet Caribbean shrimp with couscous flavored with orange and stock made from the shrimp shells.
Ingredients
- 3 jalapeño peppers
- 2 roma tomatoes
- 1 garlic
- 1 onion
- 1/3 C cilantro
- 1 1/2 C fresh pineapple
- 1 ancho pepper
- 1 lime
- salt to taste
Roasted Pineapple Salsa:
- 1 lb shrimp
- 1/3 C roasted pineapple salsa
- refrigerate for 1-2 hours
Shrimp Marinage:
- 1 C couscous
- 32 oz of chicken stock
- 1 garlic
- 1/2 fresh orange
- shrimp shells
- 1 onion
- salt and pepper to taste
CousCous:
Instructions
- broil jalapeños and tomatoes in oven at 500 degrees
- remove skin from tomatoes
- add all ingredients in blend with 1/2 C water and blend
- refrigerate for 3-4 hours
salsa:
- add stock, onion, orange, shrimp shells and garlic in pot and reduce until liquid is about 2 Cups
- Strain solids from liquid
- Bring back to boil and and add vegetables of choice and 1 C of couscous
- stir, turn off heat and cover for 5-10 minutes.
Couscous:
- Heat pan on medium/high heat
- add oil and habanero pepper or scotch bonnet peppers depending on desired heat.
- add shrimp and cook for about 4 minutes until done
- add 1/3 C of salsa stir to warm and serve
- Garnish with Cilantro
- Eat and Enjoy!!!
