How to make a simple brined pork tenderloin and orange sesame glaze. I got over the steamed and sauteed green bean in the video. If you have never brined meat your should give it a try. It is easy to to and tastes amazing. The orange sesame glaze is easy to make but feel free to add your sauce if you like something better. This is a great dish to make for the holidays. It looks as good as it tastes.
Brined Pork Tenderloin with Orange Sesame Glaze

Ingredients
Marinade:
- 2 C Chicken Stock
- 1 C Apple Juice
- 1/4 C Soy Sauce
- 1/4-1/3 C Brown sugar
- 1 T sea salt
- 1 T Whole Black Peppercorns
- 1 t Thyme
- 1 t rosemary
- 3 garlic
- 4 Tangelos or Clementines(any small orange)
Orange Sesame:
- 3/4 C fresh squeezed orange juice
- 1 T light soy sauce
- 1 t soy sauce
- 2 t sesame oil
- 1 garlic clove
- 1/2 t fresh ginger
- 1 t mirin
- 2 t honey
- 1-1 1/2 T sugar
- 1-2 t red pepper flakes
Green Beans:
- green beans
- olive oil
- butter
- salt
- pepper
Instructions
Marinade:
- add all ingredients to 2 quart pan and warm to melt sugars
- let cool and add to meat for at least 24 hours.
Orange Sesame:
- heat 1 T canola oil in pan
- add red pepper, garlic and ginger
- stir for 15 second and add rest of ingredients
- simmer for 5-8 minutes
- add a corn starch mixture to thicken to desired consistency
- set aside
Pork Tenderloin:
- drain and let come to room temperature ( I removed all peppercorns sticking to meat)
- season meat with garlic salt
- Heat oven save pan with oil and sear meat on all four sides
- Bake in oven for 15-20 minutes at 400 degrees. Internal temp should be between 145-160 degrees.
- Let rest for 10 minutes
Green Beans:
- simmer in a pan of water for 6 minutes
- drain and add beans back to pan
- add olive oil and butter to pan and toss.
- salt and pepper to taste and you are done
