Benton’s Bacon Dog

The hotdog is named after the world-famous Benton’s bacon. The bacon is hickory smoked for three days. Once you smell and taste this bacon you will understand. I always wanted to try the bacon. The bacon itself is not that expensive but there shipping is around $25. Seems really high but luckily my neighbor heard me talking the bacon and bought me some. People who are not used to intense smoke might be put off by its flavor. In the north people smoke with little electric smokers and wood chips. The flavor is like traditional wood smoking and then some, plus a little more.

The idea was to wrap an all-beef hotdog in a slice of Benton’s bacon. Note, read directions and do not overcook or it can become bitter. It is topped with a BBQ slaw I made with my homemade sauce but and will do, roasted green chilis, and bacon crumbles. I put this on a Hawaiian bun. They were a bit dry after two days and bored it out so it would not split. However, a brioche bun would be good too. Let me know what you think?

Benton's Bacon Dog


    BBQ Slaw:
  • 2 C shredded cabbage and carrots
  • 1 C shredded red cabbage
  • 1/4 C chopped green onion
  • 1 T cider vinegar
  • 2 T brown sugar
  • 4 T BBQ sauce
  • 8 slices of Benton’s bacon
  • 6 all-beef hotdogs
  • 6 buns Hawaiian or brioche
  • 1 jar roasted green chilis
  • bbq sauce
  • Optional would be sweet pickles


    BBQ Slaw:
  1. Mix all ingredients together and refrigerate for 2 hours
  1. slice and cook two pieces of bacon to create bacon crumbles
  2. wrap hotdog with bacon securing each end with toothpicks
  3. Saute in cast iron or saute pan with the lid on to steam hotdog (don’t overcook)
  4. Steam bun if you like
  5. add hotdog to bun
  6. add a bit more bbq sauce
  7. add slaw
  8. top with green chilis and bacon crumble
  9. Eat and Enjoy!
