1 easy, Warm and comforting Whisky chili with beans – perfect for a winter night!

Whisky Chili with Beans! I actually prefer chili without beans. Most of my chili recipes are more involved and I wanted my first chili on this site to be simple. It is simple but has a wonderful flavor. This whisky chili is on the meaty, hearty side. I used whisky for flavor, because usually I smoke my meats. I also used smoked ancho peppers I make myself. You can use any smoky pepper you can find. This will most likely be Chipotle but I like ancho better. Ancho is a dried Poblano pepper. This whisky chili is something you make quickly. I usually freeze half and save for later. I prefer to eat chili with cornbread. I have a great rustic cornbread recipe that I will post very soon.

Which Whisky to Use?

When deciding which whisky to use in your whisky chili it really depends on what you have. I usually have a whisky that cook with. Pick a whisky with a flavor you like, because it will be present in the dish.

Ultimately, the decision to include or exclude beans in chili is a matter of personal preference. And one can always add beans as per their desire. I usually make chili without beans, so it is odd my first chili recipe has beans.

  • 1 large pot

Ingredients
  

  • 2 whole sweet onions
  • 1 lb ground or beef or your choice
  • 1 lb pork roast
  • 1 lb chorizo
  • 8 oz diced green chilis
  • 2-3 cloves garlic-I always use fresh
  • 28 oz crushed tomatoes
  • ¼ cup apple cider vinegar
  • 3 whole smoked peppers, I used ancho I grind them before use I make them at home.
  • 1 tbsp Cumin
  • 1 tbsp smoked paprika
  • 2 tsp white pepper
  • 1 tbsp mexican oregano
  • tsp Mirch or other hot pepper to taste Mirch is very hot and can be found in an Indian Grocery Store.
  • ¼ cup whisky
  • ¼-⅓ cup brown sugar- to taste
  • 32 oz beef stock
  • 16 oz black beans
  • 16 oz red beans or pinto You can add more or remove the beans totally

Instructions
 

Meats

  • brown or grill ground beef or beef of your choice
    1 lb ground or beef or your choice
  • Grill or Roast chorizo and pork roast, let rest and chop into bit size pieces
    1 lb pork roast, 1 lb chorizo
  • Heat large pot and add 1-2 tbsp of oil to saute sweet onions
    2 whole sweet onions
  • add garlic and cook for 30 seconds to release aroma but not burn garlic
    2-3 cloves garlic-I always use fresh
  • add dry spices and cook for 30 seconds to release aroma
    3 whole smoked peppers, I used ancho I grind them before use, 1 tbsp Cumin, 1 tbsp smoked paprika, 2 tsp white pepper, tsp Mirch or other hot pepper to taste
  • add rest of ingredients including meat. Rinse beans if canned!
    8 oz diced green chilis, 28 oz crushed tomatoes, ¼ cup apple cider vinegar, 1 tbsp mexican oregano, ¼ cup whisky, ¼-⅓ cup brown sugar- to taste, 32 oz beef stock
  • bring to a simmer and reduce for 1-1.5 hours. Your desired consistency
  • I usually let me sit to cool down, then serve and enjoy
