Well I finally had time to get something up.  Sorry for the delay but I have been busy working.  I wanted to come up with a cookie recipe that I could make two similar but different cookies.   I orginally was going to do a white chocolate chipe but ended up making these maple almond and pecan almond cookies.   I already had a neighbor buy me more almonds and pecans to make her more cookies.   In the video I show chopped almonds but I prefer shaved almonds.  However you can do 3/4 shaved and 1/4 chopped.  I hope you give this a try and enjoy the recipe.

Maple Almond and Maple Pecan Cookies

Yield: 29 cookies

Ingredients

    Wet Ingredients:
  • 1C softened unsalted butter
  • 1C brown sugar
  • 3/4C sugar
  • 1/4C real maple syrup
  • 2 eggs room temp.
    Dry Ingredients Almond Cookies:
  • 2C all purpose flour
  • 1t salt
  • 1t baking powder
  • 1C oatmeal
  • 6oz of shaved almonds. You can do 4oz of shaved and 2 oz of chopped!
    Pecan Cookies
    Dry Ingredients Pecan Cookies:
  • 2C all purpose flour
  • 1t salt
  • 1t baking powder
  • 1C oatmeal
  • 1T cinnamon
  • 6oz chopped pecans

Instructions

  1. Mix wet ingredients in separate bowl and mix
  2. Mix dry ingredients in separate bowl and mix
  3. combine wet and dry and mix.
  4. Use spoon to put a ball of dough on cookie sheet. I made big cookies. My dough was larger than a golf ball.
  5. Preheat oven at 375 degrees
  6. Cook on greased cookie sheet 8-9 minutes
  7. It really depends on which cookie and their size. Pecan took a bit longer to cook.
