How about a homemade jerked half chicken recipe.  This is easy to make and will render a more flavorful chicken.  You will be surprised that even though this has scotch bonnet peppers it is not as hot as you might expect.  My wife didn’t even complain about the heat.

I ate something like this once at a restaurant in Atlanta called, “Eats.”  I made the rice a little bland by using water instead of chicken stock.  I didnt’ want it to overpower the chicken.  If you don’t like rice and beans the chicken is great on its own.

My gas grill broke and i had to put charcoal in it to cook this meat.  It gets a little hot so most grill will not char like mine.  You do have to cook the chicken a little longer than normal and to full cook the meat on the inside.  You don’t have to serve the half a chicken either.  You can easily separate the meat.

Jerked Chicken and Caribbean Rice


    Chicken Marinade:
  • 3-4 green onions
  • 1T Fresh Thyme
  • 1t salt
  • 1t white pepper
  • 2T brown sugar
  • 1t allspice
  • 1/2t nutmeg
  • 2-4 scotch bonnet peppers de-seeded (You can use Habanero instead but they are not as sweet)
  • 1/4 C soy sauce
  • 1T olive oil
  • 2T cider vinegar
  • 1/2 C onion
  • 1/2 C apple juice (you can use orange juice instead)
  • 2 glove of garlic
  • 1 t fresh ginger
  • 1 t smoked paprika
  • 1 t cumin
  • 2 half chickens
    Caribbean Rice:
  • 1 package of lima beans
  • 3/4 C rice
  • 2 C water or chicken stock
  • 1 t salt or more if you don't use chicken stock
  • 1/2 C onion
  • 1t fresh thyme
  • 1 scotch bonnet deseeded
  • 1 clove garlic
  • 2 bay leaves
  • 1/2 white pepper
  • 1/2 cumin
  • 2-3 t smoked paprika
  • 1/3 C coconut milk


  1. blend all ingredients for marinade in food processor
  2. clean chicken in salt and cold water, remove fat and dry
  3. stab holes in chicken with fork or knife
  4. pour marinade over chicken for 6 hours to overnight
  5. grill until done
  6. let chicken rest for 5-10minutes and serve
    Caribbean Rice:
  1. clean rice
  2. add stock or water
  3. add everything but the coconut milk
  4. bring to a boil and then a low simmer or use rice cooker
  5. After rice is done add coconut milk and stir
  6. season to taste
  7. Serve and Enjoy!
