Honey Sriracha Chicken Fried Rice

Add a little bite to chicken fried rice. This is simple and easy to make. I usually make more rice than I need when I make Asian or Indian food. You can use that day old rice to make any sort of fried rice. The honey sriracha sauce can be as hot or mild as you like just by changing the honey and sriracha ratios. Honey Sriracha Chicken Fried Rice

Ingredients

    Chicken Marinade:
  • slice or cube 2 chicken breasts
  • 1 t sesame oil
  • 1/2 t white pepper
  • 2 t mirin
  • 1 t dark soy sauce
  • 1 garlic clove
  • 1 egg
  • 1/4 corn starch
    Honey Sriracha Sauce:
  • 2 T honey
  • 2 T sriracha
  • 1 T soy sauce
  • dash of five spice
    Fried Rice:
  • 2 C day old rice
  • 2 T oil
  • 1 C green beans
  • 1 C peas and carrots
  • 1/3 C chopped red pepper
  • 1/4-1/3 C green onions
  • 1 garlic clove
  • 3 eggs

Instructions

    Chicken Marinade:
  1. add sesame oil, white pepper, mirin, soy sauce, garlic to chicken
  2. refrigerate for 2hours or overnight
  3. bring the chicken to room temp and add an egg
  4. mix and then add corn starch
    Honey Sriracha Sauce:
  1. mix all ingredients together and set aside
    Fried Rice
  1. scramble 3 eggs and set aside
  2. heat wok or pan until it is hot and add oil. Let oil get hot and then stir fry chicken
  3. remove chicken and set aside
  4. If green beans are fresh add green beans and 1 C of water
  5. let beans simmer in water until it has evaporated
  6. add peas, carrots, red pepper and garlic
  7. add 1/4 of chicken stock or water and heat up rest of veggies
  8. add rice and break up clumps
  9. add sauce (Note if you want the sauce hotter or sweeter change the ratio of honey and sriracha)
  10. stir and then add chicken and green onions
  11. stir and remove from heat
  12. serve and enjoy!
