Homemade Hickory Smoked Tamales
Homemade Hickory Smoked Tamales Episode 4 Part 3

Ingredients
- Red Sauce for Meat
- -4 cloves of garlic
- -3/4 C of white sweet onion
- -1 Fresh jalapeno pepper
- -1 Guajillo chili
- -2 Ancho chilis
- -3 Chipotle chilis
- -2 Roma tomatoes
- -1 t salt
- 1 1/2 t whole cumin seed
- Masa
- -3 C of masa mix
- -3 C of chicken stock
- -1 t salt
- -1 1/2 t baking powder
- -1/3 C lard
Instructions
- Red Sauce for Meat
- Simmer all above ingredients for 5 minutes and let rest for 10 minutes except Cumin and Salt and Tomatoes.
- Simmer tomatoes in stock for 15 minutes and remove skin.
- Add all ingredients in blender and mix until smooth.
- Chicken Stock for Masa
- -32 OZ of Good quality chicken stock.
- Simmer with tomatoes, 2 cloves of garlic and onions for 15 minutes.
- Separate liquid from solid. Tomatoes, garlic and onions will be used in Red Sauce above.
- Add 1/2 Cup of water to stock.
- Combine masa mix, salt and baking powder and mix
- Add lard and mix with pastry knife
- Slowly add stock until masa is light and fluffy.
- Corn Husks
- Soak corn husks in hot water for 15 minutes
- Spread masa on corn husk(see video)
- add meat and fold (see video)
- Steam upright for 45 minutes
