Homemade Hickory Smoked Tamales Episode 4 Part 3

Ingredients

  • Red Sauce for Meat
  • -4 cloves of garlic
  • -3/4 C of white sweet onion
  • -1 Fresh jalapeno pepper
  • -1 Guajillo chili
  • -2 Ancho chilis
  • -3 Chipotle chilis
  • -2 Roma tomatoes
  • -1 t salt
  • 1 1/2 t whole cumin seed
  • Masa
  • -3 C of masa mix
  • -3 C of chicken stock
  • -1 t salt
  • -1 1/2 t baking powder
  • -1/3 C lard

Instructions

  1. Red Sauce for Meat
  2. Simmer all above ingredients for 5 minutes and let rest for 10 minutes except Cumin and Salt and Tomatoes.
  3. Simmer tomatoes in stock for 15 minutes and remove skin.
  4. Add all ingredients in blender and mix until smooth.
  5. Chicken Stock for Masa
  6. -32 OZ of Good quality chicken stock.
  7. Simmer with tomatoes, 2 cloves of garlic and onions for 15 minutes.
  8. Separate liquid from solid. Tomatoes, garlic and onions will be used in Red Sauce above.
  9. Add 1/2 Cup of water to stock.
  10. Combine masa mix, salt and baking powder and mix
  11. Add lard and mix with pastry knife
  12. Slowly add stock until masa is light and fluffy.
  13. Corn Husks
  14. Soak corn husks in hot water for 15 minutes
  15. Spread masa on corn husk(see video)
  16. add meat and fold (see video)
  17. Steam upright for 45 minutes
