CHICKEN LO MEIN

Chicken Lo Mein is an easy and simple dish to make.  I used an asian egg noodle in this recipe but you could use an Italian noodle as well.  Most Asian markets sell a large variey of fresh and frozen noodles.  Make sure you follow the directions on the package and don’t over stir the noodles.

You can really use any sort of protein in this dish or none at all.  As far as the vegetables you can use any thing you want.  I used Napa cabbage in this but regular or bok choy could be substituted.  Try one of the two different sauces I have supplied in the recipe or make one up or you own.  Enjoy!

CHICKEN LO MEIN Episode 42

Ingredients

    Chicken:
  • 1 chicken breast sliced
  • 2 t mirin
  • 2 t light soy sauce
  • 1 t sesame oil (optional)
  • 1 T corn or potato starch
    Veggies:
  • really what ever you want
  • Note: this is what I used per dish I made two different dishes
  • 1 t garlic
  • 1 t ginger
  • 1/3 C carrots
  • 1/3 C red pepper
  • 1/2 C mushrooms
  • 1/2 C bean sprouts
  • 1/4 C green onions
  • 1 C napa cabbage
    Noodles
  • I used 1/2 lb of noddles per dish.
  • Sesame oil (optional)
    Sauce 1:
  • 1 T hoisin sauce
  • 2 t light soy sauce
  • 2 t dark soy sauce
  • 1 t sesame oil
  • 1-2 t red pepper flakes
  • 2 t-1 T sugar
  • 2 T chicken stock
  • pinch of five spice powder
  • salt and pepper to taste
    Sauce 2:
  • 1 T hoisin sauce
  • 2 t light soy sauce
  • 2 t dark soy sauce
  • 1 t sesame oil
  • 1 T ketchup
  • 1-2 t chili crisp (probably will only find this in Asian market) substitute red pepper flakes
  • 1 T sugar
  • 2 t mirin
  • pinch of five spice powder
  • 1 T chicken stock
  • salt and pepper to taste

Instructions

    Noodles:
  1. cook according to package but only about 2/3 of the way done
  2. drain and blanch in cold water
  3. coat is a bit of sesame oil so noodles will not stick together
  4. set aside
    Chicken:
  1. Cook chicken in wok until almost done
  2. remove from pan and set aside
  3. deglaze pan with 1/4 C water
    Veggies:
  1. Cook veggies in order of how long the need to cook.
  2. veggies should be crisp
  3. add bean sprouts, cabbage, and green onions at the end
  4. stir and cook for 1 minute
  5. add noodles and sauce
  6. add salt and pepper
  7. cook until noodles are coated
  8. Serve and enjoy
  9. For Sauce 2
  10. do the same as above but ad cilantro at the end.
