Carrot Soup Episode 27

The first time I had carrot soup was on Inishmaan in Ireland.  I really didn’t want the soup but it was the only mean available on the tiny Aran Island.  Long story short it was so good.  Now this is 20 years later and I finally decide to make it.  It is a really rich soup and not something you would want a giant bowl of but it is so good on a cold winter afternoon.  I don’t think it is something most Americans would ever consider making but it is worth your time.  It would be great with a sandwich.

Carrot Soup Episode 27


    Carrot Soup:
  • 2-3 T butter
  • 1/2 C chopped onion
  • 1 clove of garlic
  • 2 t fresh chopped ginger
  • 4-5 sprigs of thyme
  • 32 oz of peeled carrots
  • 1 quart of chicken stock
  • 2 bay leaves
  • juice of 1/2 a lemon
  • 3/4 C heavy cream (can use half and half or yogurt)
  • salt and pepper to taste


    Carrot Soup"
  1. saute onions in butter
  2. add all ingredients but cream and simmer for 45 minutes
  3. puree with hand blender
  4. add cream and blend until smooth
  5. add salt and pepper
  6. eat and enjoy!
