How to make a spicy sweet Caribbean shrimp with couscous flavored with orange and stock made from the shrimp shells.

Caribbean Shrimp with Couscous

Ingredients

    Roasted Pineapple Salsa:
  • 3 jalapeño peppers
  • 2 roma tomatoes
  • 1 garlic
  • 1 onion
  • 1/3 C cilantro
  • 1 1/2 C fresh pineapple
  • 1 ancho pepper
  • 1 lime
  • salt to taste
    Shrimp Marinage:
  • 1 lb shrimp
  • 1/3 C roasted pineapple salsa
  • refrigerate for 1-2 hours
    CousCous:
  • 1 C couscous
  • 32 oz of chicken stock
  • 1 garlic
  • 1/2 fresh orange
  • shrimp shells
  • 1 onion
  • salt and pepper to taste

Instructions

    salsa:
  1. broil jalapeños and tomatoes in oven at 500 degrees
  2. remove skin from tomatoes
  3. add all ingredients in blend with 1/2 C water and blend
  4. refrigerate for 3-4 hours
    Couscous:
  1. add stock, onion, orange, shrimp shells and garlic in pot and reduce until liquid is about 2 Cups
  2. Strain solids from liquid
  3. Bring back to boil and and add vegetables of choice and 1 C of couscous
  4. stir, turn off heat and cover for 5-10 minutes.
    shrimp:
  1. Heat pan on medium/high heat
  2. add oil and habanero pepper or scotch bonnet peppers depending on desired heat.
  3. add shrimp and cook for about 4 minutes until done
  4. add 1/3 C of salsa stir to warm and serve
  5. Garnish with Cilantro
  6. Eat and Enjoy!!!
